A few years ago, I had my first taste of a herb mix featuring zaatar leaves, and it left an indelible impression on me. The simplicity of the ingredients masked a delightful uniqueness, distinct from the zaatar mix I had grown accustomed to. After some exploration, I unveiled the secret ingredient: Aleppo pine seeds. These wild black pine seeds hail from a quaint village in southern Lebanon known as Maghdouché. From the moment I embarked on my culinary journey with Tanios, I knew that someday, I would revisit this memorable recipe, paying tribute to it by recreating it with wild zaatar leaves from Andket.

How to savour this blend?

To truly appreciate this blend, remember to hydrate it with a touch of olive oil—never apply it dry! However, exercise moderation with the oil, unlike the traditional zaatar mixture; use just enough to gently coat the ingredients. You can simply enjoy it atop a piece of sourdough bread or a grilled vegetable. Truly, the culinary possibilities are endless!

When you take your first bite, you’ll encounter the herbal notes of the leaves, followed by the delightful crunch of pine seeds, along with their subtle, oily undertones, all of which the presence of sesame seeds enhances. Salt will elegantly wash over your taste buds, enhancing the entire experience.
