from a sleepy village in the north of Lebanon.
Tanios is a borderless interlude, one to celebrate, eat and drink.

How we harvest our wild plants?
Our yearly harvest is punctuated by seasonality.
We work with wild plants the way they exist in nature: each one has its moment, its rhythm, and its limits. Harvesting is done by hand, in small quantities, and only when the plant is at its peak.
We don’t force growth, we don’t rush timelines, and we don’t harvest everything at once. Some years are generous, others more restrained, and we accept that variability as part of the process. Seasonality decides what we harvest, when we harvest it, and how much there will be.
