Maghdouché
A few years ago, I had my first taste of a herb mix featuring zaatar leaves, and it left an indelible impression on me. The simplicity of the ingredients masked a delightful uniqueness, distinct from the zaatar mix I had grown accustomed to.
After some exploration, I unveiled the secret ingredient: Aleppo pine seeds. These wild black pine seeds hail from a quaint village in southern Lebanon known as Maghdouché.
From the moment I embarked on my culinary journey with Tanios, I knew that someday, I would revisit this memorable recipe, paying tribute to it by recreating it with wild zaatar
leaves from Andket. This mix is made with Aleppo wild pine seeds, wild zaatar leaves, roasted organic sesame seeds, and salt.
