Wild zaatar is seasonal by nature: hand-picked in early summer from the hills of Andket, in northern Lebanon, and savoured throughout the year. Wilder in fragrance and flavour than its cultivated counterpart, Lebanese wild zaatar is also noticeably lighter in colour.
In Lebanon, nine plants are commonly called "zaatar", but only three are true oregano.
Of those, only two varieties “Origanum ehrenbergii” and “Origanum syriacum” are used in the traditional zaatar blend. The first is endemic to Lebanon; the second grows across Lebanon, Syria and Palestine.

Our blend is a family recipe, made from 100% natural ingredients: wild zaatar (Origanum syriacum), organic sesame seeds, wild sumac and salt. The oregano is harvested in June/July in the Akkar region, slowly dried away from direct sunlight, then milled at a local cooperative in the village of Andket. Ingredients are only combined at the time of packaging, to keep the blend as fresh as possible.
